5 Ingredient Garlic Butter Rice with Kale

Garlic Butter Kale rice is one of the simple rice recipes for dinner you can whip up in 15 minutes. This is an easy rice dish with few ingredients you may already have in your pantry.

MAIN INGREDIENTS

Butter – 3 tbsp Unsalted Butter, use vegan butter or coconut oil for vegan

Garlic – 6 to 8 cloves of chopped Garlic

Rice – 1 cup of long grain basmati rice, rinse well and soaked for 20 mins (I used Khazana basmati rice from Costco)

Broth – 1 and 1/4 cups of low sodium vegetable broth or any type of broth or water

Kale – 1 cup of finely chopped Kale, washed and steams removed or chopped spinach

Seasoning – Salt and Pepper

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS

STEP 1 :

  • Turn on instant pot to sauté mode (high) and heat it. Melt the butter, add the minced garlic saute until brown.
  • Save 1 tbsp of fried garlic for later use.

STEP 2 :

  • Then add in drained rice and roast for 1 min without breaking the rice.
  • Switch off the heat (press cancel)

STEP 3 :

  • Pour 1 & 1/4 cups of low sodium vegetable broth and salt.
  • Mix gently, making sure no browning sticking to the pot and rice is completely submerged under liquid.

(Ratio – 1 : 1& 1/4 for rice and liquid)

STEP 4 :

  • Close the Instant Pot with pressure valve to sealing.
  • Select Manual/Pressure Cook on high pressure for 5 minutes, and let the pressure release naturally for 10 minutes.
  • Then, release all remaining pressure manually.

STEP 5 : Final preparation

  • Open the lid carefully, add chopped kale (steam removed or spinach), pepper powder and check for seasoning and add salt as required. 
  • Mix the rice using spatula and cover the pot with lid and let it rest for 4 mins. This helps to cook the kale.

STEP 6 : Serving

  • Once resting time completed, open the lid and fluff up the rice.
  • Sprinkle fried garlic (reserved earlier) and serve this delicious garlic butter rice hot.

TIPS AND TRICKS

Vegan: Use vegan butter or coconut oil in place of regular butter.

Substitute : I have used kale, replace with chopped spinach.

Vegetable broth can be replaced with any type of broth or water.

Storage: Store leftovers, covered in an airtight container for 3-4 days in the fridge. Before serving heat for 1 min in microwave or cook for 2 mins in saute pan.
