Spaghetti Aglio E Olio, it is a simple Italian pasta that’s also very popular. Aglio E Olio literally means olive oil and garlic in Italian. People also usually say as garlic spaghetti.
MAIN INGREDIENTS
Spaghetti – 200 gram Thin Spaghetti
Garlic – 6 cloves Minced Garlic or thinly sliced
Chili – 3 medium size Fresh Red Chilies, deseeded and chopped finely. If you dont have fresh chili replace it with dry chili
Cheese – 100 gram Grated Parmesan and some additional for topping, for Vegan use nutritional yeast
Parsley – 2 tbsp of Fresh Parsley finely chopped
Other Ingredients – 3 tbsp of Olive oil, salt and pepper for seasoning
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Cooking Pasta
- Cook 200 gram spaghetti in salted water with 1 tsp of oil for 12 mins OR according to package instructions and drain. Don’t rinse.
- Reserve 100 ml of pasta water for later use.
STEP 2 : Chili Oil
- In a pan add olive oil, minced garlic and saute for 1 to 2 mins at low heat (Do not brown the garlic).
- Add chopped chilies and saute for another 2 mins.
STEP 3 :
- Add cooked spaghetti and toss well in chili oil.
- Season with salt and pepper.
STEP 4 :
Add 100 ml of reserved pasta water and toss well for 1 minute at medium heat.
STEP 5 : Final Preparation
- Switch off the heat.
- Add parmesan and chopped parsley and mix well until combined.
STEP 6 : Serving
Serve it hot with grated parmesan on top.
TIPS AND TRICKS
Vegan: Use Nutritional yeast in place of parmesan.
Substitute: In place of spaghetti, you can use any type of pasta that you prefer.
I have used fresh deseeded red chilies, you can replace with dry red chilies. Do not forget to deseed the chilies.
Storage: Refrigerate leftover in an airtight container for up to 3 days. They taste delicious when served cold.
