These homemade mashed potatoes are rich and creamy, full of great flavor and easy to make. I have modified it a bit and added a mushroom sauce to make this vegetarian recipe for Mashed Potatoes.
INGREDIENTS TO MAKE MASHED POTATOES
Potatoes – 1 lb of Yellow potatoes, peeled and chopped into pieces. Place the potato pieces in a bowl of water to prevent oxidization
Milk – 200 ml of Whole milk, for vegan use plant based
Butter – 2 tbsp of Unsalted Butter, for vegan use vegan butter
Salt – 1 tsp Salt as required
INGREDIENTS TO MAKE MUSHROOM SAUCE
Mushroom – 200 gram White Mushroom, rinsed and chopped into pieces
Garlic – 1 clove Minced Garlic
Onions – 1 cup chopped Red Onions
Tomatoes – 1/2 cup of chopped Tomatoes or 1 tbsp of Tomato paste
Seasoning – Salt and Pepper
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Mashed Potatoes
- In Instant pot, add chopped potato pieces, milk, water, salt and give a good mix.
- Close instant pot and set pressure valve to sealing and pressure cook at high for 6 mins. Allow natural pressure release for 10 mins and Followed by a quick pressure release.
STEP 2 : Mushroom sauce
- Meanwhile, chop onions, tomatoes, mince garlic and make ready all the spices for cooking.
- In a saute pan add oil at medium heat, once heated add in garlic and onions and sauté until translucent.
STEP 3 :
Add chopped tomato cook until mushy and 1/4 cup of water. Mix well and cook for 1 min.
STEP 4 :
Now add in the chopped mushrooms, give a good mix and cover and cook for 5 to 7 mins at medium heat.
STEP 5 :
Add the seasoning, pepper, salt, mix for a minute and remove from the heat.
STEP 6 : Final Preparation
- Once instant pot pressure released completely and pin drops, Open the lid carefully, with a potato smasher mash the potatoes well.
- Now add in the unsalted butter and give a good mix.
STEP 7 : Serving
In a serving plate, place mashed potatoes, topped it with mushroom sauce, sprinkle some fresh dill and serve it hot.
TIPS AND TRICKS:
Vegan – I have use whole milk and unsalted butter, you can replace it with any plant based milk of your choice and vegan butter.
