Paneer cold Sandwich recipe is a quick and easy to make healthy sandwich loaded with fresh vegetables and grated paneer (Indian cottage cheese). Eat them as a cold sandwich or grilled.
Serve it for breakfast, after-school snack, or can be packed into a lunch box.
MAIN INGREDIENTS
Paneer / Indian cottage cheese – 150 gram of Grated Paneer
Vegetables – 1/2 cup of shredded cabbage and bell peppers, 1/4 cup of tomato and grated carrots, 3 tbsp of chopped onions
Greek yogurt – 4 tbsp of Plain low fat greek yogurt or plain yogurt of your choice
Seasoning – Salt and Pepper for seasoning
Bread Type – 6 thin sliced multigrain bread or any low calorie wheat bread
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Sandwich Mixture
In a bowl add all the above ingredients and give a good mix.
Step 2 :
Take thin sliced multigrain bread and spread 2 to 3 tablespoon of prepared sandwich mix, then topped it with another slice of bread.
Step 3 : Final preparation
- Again spread sandwich mixture and topped it with another bread slice and press gently with your hand.
- Repeat the same process for remaining bread slices.
Step 4 : Serving
Cut and Serve the cold sandwich immediately or wrapped in food cover and refrigerate for later use.
TIPS AND TRICKS:
Variations: Feel free to add in your own combination of veggies to the sandwich mixture.
I used greek yogurt, you can replace with plain low fat yogurt.
Storing: Wrap the sandwich in food cover and stays fresh in refrigerator for 3 to 4 days.
