This instant pot cabbage fried rice is quick and easy recipe made with simple ingredients and has great flavors!
MAIN INGREDIENTS
Rice – 1 cup Long grain Basmati rice (rinsed well and soaked for 15 mins), I used long grain khazana basmati rice from Costco)
Cabbage – 1 cup (100 gram) Shredded Cabbage
Onions – 1 medium size (1 cup) Red Onion, sliced
Garlic & Ginger – 1 tsp minced Garlic and 1/2 tsp minced Ginger
Green peas –1/4 cup of Frozen green peas
Seasoning – 2 tsp of Dark soy sauce, salt and pepper for seasoning

STEP 1 : How to cook rice in Instant pot
- Take 1 cup of Long grain basmati rice, rinse well and soak for 15 mins.
- To the Inner pot add drained rice, 1/2 tsp salt, 1/2 tsp oil, and 1 and 1/4 cups of water. Make sure all the rice submerged under the liquid.
- Close the lid and make sure that the vent in sealing position. Select manual/ pressure cook at high for 4 mins and allow NPR for 10 minutes.
- Then do a quick pressure release manually. Take out the rice from the pot and keep aside.
STEP 2 :
- Use the same pot with out cleaning (if not you can clean the inner pot) and turn on the sauté mode (high) and allow the pot to heat.
- Now add oil, once heated add add garlic, ginger and spring onion whites. Sauté for 30 seconds.
STEP 3 :
- Then add sliced onions and sauté until translucent.
- Add shredded cabbage, green peas, 1/2 tsp salt and saute for 2 mins (or until half cooked).
- Switch Saute mode to low.
STEP 4 : Final Preparation
- Now add cooked basmati rice, pepper powder, soy sauce and mix it gently until well combined.
- Switch off the heat (press cancel).
STEP 5 : Serving
Garnish with spring onions and serve it hot.
TIPS AND TRICKS
Storage: Store leftovers, covered in an airtight container for 3-4 days in the fridge. Before serving heat for 1 min in microwave or cook for 2 mins in saute pan.
