These Eggless Finger Millet / Ragi cookie recipe a quick healthy snacks made using finger millet flour, wheat flour, cocoa power and almonds.
MAIN INGREDIENTS
Flour – 1 cup Ragi flour / Finger Millet and 1/2 cup Wheat flour
Cocoa powder – 1/3 cup Cocoa powder
Butter – 1/2 cup Soft Unsalted Butter
Sweetener – 3/4 cup Dark Brown Sugar or Powdered Jaggery, for more sweetness add additional 1/4 cup
Nuts – 1/4 cup Chopped Raw Almonds
Milk – 4 tbsp of Milk, if required add additional 1 tbsp of milk
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Dry Mixture
- In a large bowl, using a wire whisk mix all the dry ingredients – ragi flour, wheat flour, cocoa powder, baking powder together.
- Now add dark brown sugar and chopped almonds, mix well.
STEP 2 :
To the dry mixture add soft butter and mix until it resemble crumbs.
STEP 3 :
Gradually add 4 tablespoon of milk and form a dough using hand (if required add additional 1 tbsp of milk).
STEP 5 :
Wrap the cookie dough in food wrapper and refrigerate for 15 to 20 mins.
STEP 6 :
Take 1.5 tablespoon of chilled dough and form a cookie shape. You will get approximately 22 cookies.
STEP 7 :
- Arrange the cookies in parchment lined air fryer tray with 1 inch space in between each cookies.
- Keep half sliced raw almond on top of the cookies and press gently.
STEP 8 :
Place the cookies in the middle rack of a preheated air fryer. Bake at 320* F for 12 mins (It took 3 batches for me to bake 22 cookies)
STEP 9 : Final Preparation
Let the cookies rest for 10 mins in the tray, then transfer the cookies to a wire rack and cool down completely.
STEP 10 : Serving
Serve this delicious cookies with a glass of milk or your choice of drink.
TIPS AND TRICKS
- Cookies shape – you can also roll the chilled dough into 1/4 inch thickness, use a cookie cutter to cut cookies.
- Decoration – I have used almonds for decorating the cookies, you can make a design using fork or knife.
- To store – Once cookies are cool down completely, place them in airtight container or ziplock and store in room temperate. They stay fresh for minimum of 2 weeks.
