HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS TO SHOW YOU EACH STEP
STEP 1 : Cooking Pasta
- Cook 3/4 lb fettuccini in salted water with 1 tsp oil according to package instructions and drain.
- Don’t rinse (this helps the sauce stick to the noodles better)
STEP 2 : Seasoning Shrimp
In a bowl add peeled and deveined 1/2 lb shrimp, add 2 tbsp cajun seasoning and give a good mix.
STEP 3 :
- In a large saucepan, add 1 tbsp oil and once heated add cajun seasoned shrimp and cook until they turns in to pink. It will take about 2 mins per side to cook (don’t over cook the shrimp)
- Remove cooked shrimp and keep aside in a separate bowl.
STEP 4 : Alfredo sauce
- In the same pan with left over oil, add 2 tbsp butter, 2 cloves minced garlic, 1/2 cup finely chopped onions and sauté for 4 mins until soft and golden.
- Now add the 1.5 cups of heavy cream, bring to boil and cook for 4 mins by stirring occasionally OR until the sauce thickened.
STEP 5 :
- Remove from heat.
- Grate in the parmesan, and mix in thoroughly. Add pepper to taste.
STEP 6 :
- Add cooked pasta and shrimp and toss to coat.
- Garnish with fresh parsley.
STEP 7 : Serving
Serve hot with grated parmesan on top.
