This Grilled Corn Avocado Salad is a bright and feel-good summer salad; it’s easy to make and tastes incredibly fresh. This is a crowd-pleasing fresh corn salad, perfect for picnic and BBQ.
MAIN INGREDIENTS
Corn – 4 cobs of Sweet Corn OR 3 cups boiled Corn kernels
Avocado – 1 cup Avocado, diced
Tomatoes – 1 cup Cherry tomatoes, halved
Cucumber – 1 cup Cucumbers, diced
Onion – ¼ cup Red onion, diced
Dressing – Homemade Lemon Vinaigrette, Check step 3 in instruction below.
Topping – Add roasted nuts and dried fruits for additional flavor and crunch (Optional)
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Grilling Corn
- Preheat grill or grilling pan to medium high heat. Remove silk and husk from corn. Brush with olive oil and generously season with pepper and salt.
- Grill 2- 4 minutes per side or until slightly charred.
STEP 2 :
Cool and remove kernels from corn before using.
STEP 3 : Lemon Vinaigrette / Salad dressing
Ingredients:
- 1/3 cup Olive oil
- 1/4 cup Lemon juice OR any type of Vinegar (red wine vinegar, Cider Vinegar)
- 1/2 tsp Dijon mustard
- 1 tsp Maple syrup OR Honey
- 1/4 tsp Garlic powder OR 1 garlic cloves, minced
- 1 tsp Dried Oregano
- Salt and Pepper, to taste
- Add all of the ingredients to a small bowl and whisk together.
- Pour Lemon vinaigrette into a serving jar and enjoy Or store in an airtight container in the fridge.
STEP 4 : Salad Preparation
- Combine all ingredients – corn kernels, cucumber, tomatoes, onion, avocado and parsley in a large mixing bowl.
- Pour 4 tbsp of Lemon vinaigrette over the salad and give it a gentle stir (Adjust dressing according to your taste)
STEP 5 : Serving
Transfer the salad to a large bowl and serve.
TIPS AND TRICKS:
Variations:
- Either grill or boil corn. Once cooked, remove kernels from corn (grill your corn for maximum flavor)
- Place the onions in a bowl of cool water and let them soak while you prepare the other ingredients (this removes the harsher bite from the onions, while still giving great flavor)
Substitute:
I have used lemon vinaigrette for this recipe, you can replace it with cider vinaigrette, Red wine vinaigrette or your choice of dressing.
Serving & Storage:
Store Lemon vinaigrette in an airtight container in the refrigerator for later use.
