This one pan creamy chicken pasta is incredibly easy to make and only takes less than 30 minutes, so it’s perfect for weeknight dinners. It’s packed full with yummy flavors, with a creamy cheesy sauce, and everyone will love it!
MAIN INGREDIENTS
Chicken – 1 large Chicken breast, cut into bite size pieces OR boneless chicken pieces.
Type of Pasta – 8 oz of Fettuccine pasta or Any type pasta of your choice.
Vegetables – 1 cup of chopped Onion, 2 cloves minced Garlic, 1/4 cup of chopped Red bell pepper and 1/2 cup of sliced Mushroom
Spice & Seasoning – 1 tsp Curry powder, pepper and salt
Cream – 1/2 cup of Heavy whipping cream
Cheese – 1/2 cup of grated Parmesan cheese and some additional for topping
Broth – 2 cups of Chicken broth.
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Seasoning Chicken
- Slice the chicken breast into bite size pieces and seasoned with salt and pepper.
- Give a good mix and keep aside.
STEP 2 :
- Heat the instant pot in saute mode high and add 2 tablespoons olive oil.
- Add the Seasoned chicken and sauté for 4-6 minutes while stirring frequently. The chicken will release their water and then brown.
- Take the chicken pieces out on a plate and keep aside for later.
STEP 3 :
- In the same pot (no need to clean), add another tablespoon of olive oil and then sauté the chopped onions and garlic for 2 mins or until translucent.
- Then add bell pepper, mushroom and sauté for a couple of minutes (takes about 2 mins)
- Turn off the instant pot.
STEP 4 :
- Add the chicken broth and deglaze the pot making sure nothing is stuck to the bottom (dont skip this step)
- Now add the spices curry powder, pepper powder and salt.
STEP 5 :
- Break the fettuccine in half and spread them making sure all the pasta is covered in broth. Close lid with vent in sealing position.
- Pressure Cook the pasta on high for 5 minutes.
- When the instant pot beeps, quick release the pressure manually.
STEP 6 :
- Open the lid carefully and stir in the heavy cream, parmesan and stir well until the cheese melts.
- Then add back the sautéed chicken pieces and stir well.
STEP 7 :
- Check for seasoning and adjust as per your taste.
- Garnish with parmesan and chili flakes before serving.
TIPS AND TRICKS:
Break the pasta strands in half before adding them to the Instant Pot so that they can easily be submerged in water.
Stove top Method: Follow the same instruction as in Instant pot method. Instead of pressure cooking, cover the pot with lid and cook until pasta Al dente at medium heat (if required, add more broth while cooking). Then add the heavy cream, parmesan, cooked chicken pieces and give a good mix.
How to prevent pasta sticking together ? Avoid over mixing the pasta, just make sure all the pasta submerged in liquid (This will prevent the noodles from sticking together)
Cream and cheese – I used 1/2 cup of heavy whipping cream and parmesan. Feel free to adjust the quantity to make this lighter.
Watery – Don’t panic if you remove the lid and it seems watery. Give it a good stir and let it sit for 3-5 minutes.

Notes and Tips

- What to do if i got “Burn” sign in Instant pot ? Deglaze the pot really well using chicken broth or water. During this process turn off the Instant Pot which will allow the pot to cool down and prevent the liquids from evaporating. After deglazing there should be no browning at the bottom of the pot.
- Stove top Method: Follow the same instruction as in Instant pot method. Instead of pressure cooking, cover the pot with lid and cook until pasta Al dente at medium heat (if required, add more broth while cooking). Then add the heavy cream, parmesan, cooked chicken pieces and give a good mix.
