MAIN INGREDIENTS
If you’ve got overripe bananas and coconut flakes on hand, you can make these cookies!
Flour – 2 cups Coconut Flakes (store bought), you can also use desiccated / shredded coconut as well.
Sweetener – 3 medium size Riped Bananas, peeled
Optional mixing – Dried Cranberries or Raisins and Chocolate chips for additional taste.
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Preparation
- Preheat oven to 350º F and line a baking sheet with parchment paper or a silicone baking mat.
- With the help of weighing scale, measure 200 gram of coconut flakes and bananas.
STEP 2 : Banana puree
Add peeled bananas (200gram) to the blender and make a puree.
STEP 3 :
In a bowl combine banana puree, coconut flakes and mix until combined.
STEP 4 :
Use a cookie scoop or take 2 tablespoon of the mixture and form cookie shape, then place on lined baking sheet.
STEP 5 :
Place baking sheet in oven and bake for 20-25 minutes, or until golden brown.
STEP 6 :
Remove from oven and let cool in wire rack slightly before serving.
TIPS AND TRICKS:
This recipe makes a small amount of cookies so feel free to double or triple the recipe, if needed.
Optional mixing – include chocolate chips, chopped nuts, dried fruit.
Be sure and do not incorporate more than a small handful of mixings into each batch, or the cookies will not hold together.
Storage – Cookies can be stored in the fridge or freezer for 1 month.
