This Savory Vegetable Pastry (Veg Puffs) is a great vegetarian snack or appetizer made with puff pastry and flavorful vegetable filling. These are simple to make and great to share as a snack, or as part of a main meal.
MAIN INGREDIENTS
Vegetables – Onion (finely chopped), Carrot (peeled and diced), Green peas (fresh or frozen), Potatoes (boiled, peeled and diced)
Puff Pastry sheets – 2 sheets of Puff pastry, thawed (I used store bought puff sheets)
Ginger Garlic paste – 1/2 tablespoon of Ginger Garlic paste
Ground Spices – Turmeric, Chili powder, Coriander powder, Garam masala, Pepper powder and Salt for seasoning.
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Vegetable Mixture for Filling
- Heat a pan at medium heat, add oil. Once heated add 1/2 teaspoon cumin seeds allow it to splutter.
- Then add 1 cup of finely chopped onions and sauté until golden brown, add 1/2 tablespoon of ginger garlic paste and saute for 2 mins until raw smell goes off.
STEP 2 :
- Add 1/2 cup of Green peas, 1/2 cup of Carrot, 1/2 teaspoon salt and saute for few seconds.
- Pour 1/3 cup of water, give a quick stir.
- Cover and cook for 4 mins at medium heat.
STEP 3 :
- Once cooking time completed, open the lid and stir well for 1 to 2 minutes until all the excess water evaporated.
- Add all the spices – Turmeric, chili powder, coriander powder, garam masala and saute for 1 minute at medium heat (do not burn the spices).
STEP 4 :
Now add 2 medium size chopped boiled potatoes, 1/4 teaspoon pepper powder, 1/2 teaspoon salt and saute for 2 minutes at medium heat.
STEP 5 :
- Finally add chopped cilantro (coriander), give a quick stir.
- Check for seasoning and remove from the heat.
- Allow the vegetable mixture to cool down completely.
STEP 6 : Vegetable Puff Preparation
- Dust all purpose flour on a flat surface.
- Place thawed puff sheet and flatten the sheet with roller. Then cut the sheet into 4 square pieces (if required you can also cut the sheet into 9 small squares)
STEP 7 :
- Take 2 tablespoon of vegetable masala mixture and place in middle of the square puff sheet.
- Using finger or brush, grease the edges with water.
- Then fold into a triangle shape and seal the edges of the puffs.
STEP 8 :
- Using fork make an impression on the sides of the triangle puff.
- Repeat this method for remaining puff sheets.
- Use milk wash or egg wash on top of each puffs (do not skip this step).
STEP 9 : Instant vortex plus air fryer method
- Select Air fryer mode and set temperature to 390*F and time for 6 mins (or preheat your air fryer, if using different model).
- Meanwhile, grease the tray with cooking spray oil.
- Arrange puffs in the tray with 1 inch space between each pieces.
STEP 10 :
- Once preheat completed and when air fryer indicates “ADD FOOD”, open the lid and insert food tray in the middle rack of the preheated air fryer.
- Close the lid and air fry at 390*F for 6 mins, cook until top layer is golden brown.
- Once cooking is completed, open the lid and take out the vegetable puffs and keep aside.
- Repeat this process for remaining puffs.
STEP 11 : Serving
Enjoy hot with ketchup on the side or you can cut into half and serve.
TIPS AND TRICKS
I have prepared 4 puffs from one single puff pastry sheet, If you are making smaller puffs the air frying time might differ so check your food while air fry.
Make sure you thawed (40 to 60 mins) your store bought puff pastry sheets before making it into a puffs.
Make ahead – Prepare the vegetable filling ahead and store in refrigerator. Take it out and use when you are making the puffs. Store left over in an airtight container for 1 week in the refrigerator.
Air fryer Preheat – For the best results, always preheat the air fryer. When you add food to the air fryer, the hot immediately seals the outside guaranteeing a crispy exterior.
Air fryer Model – I used Instant vortex plus 10 qt air fryer oven, different air fryer brands may cook at different rates, so be sure to keep an eye on food while cooking.
