Spices – Onion powder, garlic powder, paprika powder and salt for seasoning

Buttermilk – 3/4 cup of Buttermilk OR Vegan buttermilk, check the instruction for how to prepare instant buttermilk at home.

Thai curry sauce – 1/3 cup Buffalo wild wings “Thai curry Sauce” (Store bought), you can also use any hot sauce of your choice

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS

STEP 1 : Preparation

  • Preheat the oven to 375°F and line two baking sheets with parchment paper. Set aside.
  • Instant butter milk –  Take 2 teaspoons of white vinegar in a bowl and fill 3/4 cup of milk, stir and rest for 5 minutes

STEP 2 :

In a large bowl, combine the spices, salt, and the flour. Add the prepared buttermilk and stir until combined. The mixture should be pretty thick.

STEP 3 :

Add the cauliflower florets to the bater, coating each piece evenly in the buttermilk mixture.

STEP 4 :

Place the coated cauliflower on the prepare baking pans, leaving room between each piece to the air can circulate around them.

STEP 5 :

Bake for 20 minutes in the preheated oven and then flip the cauliflower over to it’s other side to get an even bake. Bake for another 20 minutes on the other side.

STEP 6 : Thai curry sauce

While the cauliflower bakes, make the buffalo sauce. Combine the buffalo wild wings thai curry sauce with the melted unsalted butter and whisk to combine.

STEP 7 : Final Preparation

When the cauliflower is done, add the florets into the bowl of sauce mixture. Toss to combine.

STEP 8 : Serving

Serve with ranch or blue cheese on the side and enjoy with your choice of drink.

TIPS AND TRICKS:

Make sure to space out the cauliflower pieces on the parchment paper to make sure they can crispy on all sides.

Instant buttermilk – If you don’t have buttermilk on hand, make your own with whatever milk you like (planted based or regular milk) by adding 1 tablespoon of apple cider vinegar or lemon juice to 3/4 cup milk! Let stand for 5 minutes to thicken and then use as directed.

Substitute – I used Buffalo wild wings “Thai curry sauce”, you can use Frank’s hot sauce or any other hot sauce of your choice.

Vegan – If you like to make vegan buffalo cauliflower bites, simple swap the buttermilk for plant based buttermilk and the butter for coconut oil or vegan butter.

Gluten free – If you’d like to make these gluten free, swap out the all purpose flour for gluten free flour.
