BBQ Cauliflower Salad with Greek yogurt dressing

BBQ Cauliflower Salad is a deliciously crispy, crunchy, vegetable salad made with creamy greek yogurt dressing. This easy salad recipe is the perfect potluck dish.

MAIN INGREDIENTS

Cauliflower – 1/2 Head of the Cauliflower, cut into florets. Rinse, drain and pat dry them to remove excess water

BBQ Sauce – 1/2 cup of BBQ sauce, store bought

Seasoning – Salt and pepper

Dressing – Homemade Greek yogurt dressing, check instruction below

Other Ingredients for salad – Sliced avocado, grated carrots, sliced red onions, chopped lettuce, mixed greens of your choice (like kale, watercress, spinach, arugula)

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS

STEP 1 : Preparation

  • Preheat oven to 450˚F (230˚C).
  • Cut the head of cauliflower in half. Pluck bite-sized florets from each half. Trim bottoms of florets as necessary.
  • Line a baking sheet with parchment paper.

STEP 2 :

 Spread cauliflower florets on the baking sheet. Drizzle with olive oil. Season with salt and pepper.

STEP 3 :

  • Bake for 20 minutes in the preheated oven.
  • Remove florets from oven and toss with BBQ sauce.

STEP 4 :

Return florets to the oven and bake for an additional 10 minutes until browned to your liking.

STEP 5 : How to make Greek Yogurt Dressing

Ingredients you needed:

  • 1/2 cup Plain Greek yogurt
  • 1/2 tsp Garlic powder 
  • 1/2 tsp Onion powder 
  • 1/2 tsp Dried mixed herbs
  • 1 tsp Lemon juice
  • A dash of Pepper
  • Salt as required
  • 1/4 cup Milk or any plant based milk

Put all ingredients except the milk in a bowl and mix well. Stir in a tablespoons of the milk at a time until you reach your desired consistency. Keep in an airtight container in fridge.

STEP 6 : Serving

  • Brush more BBQ sauce on the cooked cauliflower for extra flavor.
  • Assemble the salad ingredients then add the BBQ cauliflower and drizzle with the yogurt dressing.

TIPS AND TRICKS:

You can change up the veggies, add some fresh, nuts or seeds as toppings and add some more fruit like blueberries, strawberries for variation.
