STEP 1 : Pasta Making
Fill a large pot with water, add a generous pinch of salt, bring to boil, add the pasta and cook according to package instructions.
STEP 2 : Creamy Avocado sauce
Meanwhile, make the sauce. In a food processor, add the avocado, garlic, oil, spinach, cilantro, lemon juice, salt and pepper, pulse until creamy and set aside.
STEP 3 : Chopping Vegetables
Chop red onions in to slices, cherry tomatoes in to halves and mince 1 tsp garlic.
STEP 4 :
In a pan add 1 tbsp olive oil, add chopped garlic and onions saute for few seconds, toss in the cooked pasta with Italian seasoning and a smidge of salt and pepper.
STEP 5 :
Now add cherry tomatoes and sweet corn, saute for few seconds and transfer the seasoned pasta to bowl.
STEP 6 :
Add the avocado mixture to the pasta and mix together well to combine.
Serving :
Add chili flakes on top and serve it immediately. This is best served right away or serve with in 2 to 3 hrs if refrigerated (to prevent avocado decolorization)
