Creamy Orzo pasta with Mushroom and Peas

Instant Pot pasta is a super easy one-pot recipe for making creamy and delicious pasta! Orzo is cooked in a creamy sauce with mushroom and peas. Prepped in just 20 minutes, you can have this incredible dish on the table for your family in no time!

MAIN INGREDIENTS

Pasta – 1 cup Dried Orzo pasta

Vegetables – 1/4 cup of Frozen or Fresh Peas and 8 to 10 numbers mushrooms, sliced

Onion – 1/2 cup of Yellow Onion diced

Garlic – 2 cloves of Minced garlic

Spices – Dried Oregano, Garlic powder, Pepper powder and Salt

Broth – 2 cups of Vegetable broth, you can use any type of broth of your choice or Water

Cream and Cheese – 1/2 cup of Heavy whipping cream and Grated Parmesan, plus more for topping

Parsley – Few freshly chopped parsley for garnishing

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS

STEP 1 :

  • Add the olive oil to the Instant Pot and heat on sauté mode high until hot.
  • Now add the onion and garlic to the Instant Pot. Sauté until the onions start to soften for 4 to 5 minutes (do not brown the onions)

STEP 2 :

Add the mushroom and peas to the pot and cook, stirring, for 2 to 4 minutes. Set Instant pot to saute mode low.

STEP 3 :

Add the dried oregano, garlic powder, salt, pepper and dried orzo. Sauté for 1 to 2 minutes to toast the orzo.

STEP 4 :

  • Press Cancel to turn off the Instant Pot.
  • Stir in the vegetable broth and make sure all the pasta submerged under liquid.

STEP 5 :

  • Place lid on the instant pot and turn the steam release valve to the sealing position.
  • Set the cook time to 4 minutes at high pressure (Note: The Instant Pot will take about 10 minutes to reach pressure and then the cook time will start counting down. When the cook time ends, quick release the pressure by carefully turning the steam release valve to the venting position)
  • Once all of the steam has escaped and the pin drops down, open the Instant Pot lid.

STEP 6 :

  • Add 1/2 cup of heavy cream and parmesan and mix.
  • The orzo will look a bit soupy, remove from heat and allow orzo to sit for 5-10 minutes prior to serving. This will allow the pasta to absorb liquid.

STEP 7 : Serving

Serve warm, topped with fresh parsley and grated parmesan.

TIPS AND TRICKS:

Why pasta Under cooked ? Make sure all the pasta submerged in liquid, this will allow the pasta to cook evenly.

Cream – I used heavy whipping cream. Feel free to adjust the quantity to make this lighter.

Broth – I used vegetable broth. But other broths or water would work just as well.

Watery –  Don’t panic if you remove the lid and it seems watery, give it a good stir and let it sit for 3-5 minutes.

Stove top Method: Follow the same instruction as in Instant pot method. Instead of pressure cooking, cover the pot with lid and cook until pasta Al dente at medium heat (if required, add more broth while cooking). Then add the heavy cream, parmesan and give a good mix.
