Garlic Spinach Fried rice

Garlic Spinach Fried rice is a delicious meal, loaded with fresh vegetables and greens, packed with flavors and comes together in 15 mins. This tastes as good as any restaurant version plus it is much healthier.

MAIN INGREDIENTS

Rice – 2 cups Cooked Basmati rice, chilled for 4 hours or use left over rice.

Vegetables – Onion, Carrot, spring onion, Garlic, Fresh beans, capsicum / bell pepper, corn kernels, you can customize with your favorite add – ons.

Greens – Shredded Cabbage and Spinach

Spices – Garlic powder, pepper powder and salt

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS

STEP 1 : Preparation

  • Cook 2 cup of basmati rice and cool down completely for 4 to 6 hrs or use left over rice.
  • Mince 3 tbsp of garlic and keep aside.
  • Chop all the above mentioned vegetables and keep aside.
  • Chop spring onions white and green and keep separately.

STEP 2 :

  • In a large wok or kadai heat 4 tsp oil and saute 3 cloves minced garlic on medium flame till they turn golden.
  • Further add 1/2 of chopped onion, 2 tbsp spring onion whites and saute well for 1 – 2 mins.

STEP 3 :

Then add ½ of sliced capsicum, 2 tbsp chopped carrot, roughly chopped french beans, 2 tbsp corn kernels and few shredded cabbage. Stir fry for a 2 mins on high heat (vegetables should be half cooked)

STEP 4 :

Now add in 2 cups of finely chopped spinach leaves toss well with vegetables for 1 to 2 mins at high heat.

STEP 5 :

  • Finally add 2 cups cooked basmati rice or leftover rice and toss well with vegetables.
  • Also add 1/4 tsp pepper, 3/4 tsp salt, 1/4 tsp Garlic powder and mix gently, without breaking rice grain. Allow the rice to heat up completely.

STEP 6 : Serving

Serve Garlic Spinach fried rice hot with few chopped spring onions green and chili flakes

TIPS AND TRICKS:

Why my rice breaking? Always use left over rice to make fried rice. If you dont have, cook basmati or any type of long rice that is not sticky and allow them to cool down completely and refrigerate minimum of 1 hour.

Variations – Customize with your favorite add – ons and enjoy this delicious recipe.

Flavor – Dont forget to add garlic powder at the end along with seasoning. This will adds up additional flavor and taste to the fried rice.
