Peanut Salad | Peanut chat recipe

Peanut chat recipe – One of the popular street food in India. There are numerous variations we can make this with. Usually puffed rice is added to it for extra crunchiness. In this version we kept it simple and aimed at a good source of oil free protein snack.

MAIN INGREDIENTS

Peanuts – 1 cup of Raw Jumbo Peanuts, Soaked overnight or minimum of 6 to 8 hours

Onion – 1/2 cup of finely chopped red onion.

Tomato – 1/4 cup of chopped tomato (deseeded)

Cucumber – 1/4 cup of cucumber, roughly chopped

Spices – Chili powder, Cumin powder, Chat masala, Garam masala

Lemon – 1/2 tbsp of Fresh Lemon juice.

PREPARATION

  • Soak raw jumbo peanuts over night or minimum of 6 hours. 
  • Chop finely Onions, deseeded tomatoes, cucumber, grate 2 tbsp of raw mango and chop few cilantro leaves finely.
  • Make sure all the spices are available for cooking.

INSTRUCTIONS

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS TO SHOW YOU EACH STEP

STEP 1 : Instant pot Method

  • In the instant pot add soaked peanuts, 1.5 cups of water, 1 tsp salt and mix well and make sure all the peanuts have been submerged in water.
  • Close the instant pot with lid and pressure cook high for 15 mins. Allow natural pressure release for 10 mins. Followed by a quick pressure release
  • Drain out the water from peanut.

STEP 2 : Making Peanut Chat / Salad

In a large bowl add boiled peanuts, onions, tomatoes, cucumber, grated mango, salt, chaat masala, cumin powder, red chili powder, garam masala, lemon juice and chopped coriander leaves. Give a good mix.

STEP 3 : Serving

  • Peanut salad is ready to be served.
  • Enjoy spicy, tangy, chatpata peanut chaat with masala chai or on its own.

TIPS AND TRICKS:

  • Stove top method – You can cook peanuts in a regular pressure cooker for 3-4 whistles. 
  • Adjust spices and vegetables as per your personal taste preference.
  • How to boil Peanuts perfectly ? Depends on peanut size, pressure cooking time will differ. I have used Jumbo Peanuts, Pressure cooked for 15 mins and allow natural pressure release for 10 mins, followed by quick pressure release.
  • Soaking peanuts overnight or minimum of 6 hours will also helps in reducing the pressure cooking time.

    How /where can we get raw peanuts? All supermarkets I’ve seen is roasted. Do we use unroasted shelled peanuts?
