Ingredients
- 1 cup Quinoa
- 10 to 15 Firm Tofu pieces
- 2 tbsp Oil
- 1 tbsp Garlic, finely chopped
- 1/2 cup Onion, chopped
- 1/2 cup Mixed Bell pepper, chopped
- 1/4 cup Carrot, chopped
- 1/4 cup Sprouted Green Lentils
- 1/4 cup Sweet Corn
- 1/2 cup Cabbage, Shredded
- 1 sprig Spring Onion, Chopped
- Salt (as required)
- 1 tbsp Tomato chili sauce
- 2 tsp Vinegar
- 2 tbsp Soy sauce
- 1/4 tsp Pepper powder
- Water
Garnishing: - Spring Onion Greens
Instruction:
Quinoa Preparation:
- Rinse 1cup quinoa under water, until the water comes out transparent.
- Put rinsed quinoa in a medium pan, for 1cup Quinoa add 2 cups of water (1:2 ratio),1 tsp salt and bring to a boil over medium heat. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Let it cool. Transfer to a bowl.
Tofu Preparation:
- Place the super firm tofu on the paper towel and Squizzy out the excess water from the tofu by applying mild pressure.
- Once its dried completely, cut in to small pieces
Quinoa Fried rice:
- Heat oil in a pan and shallow fry the tofu pieces (until golden and crispy)
- Take out and keep aside for later use.
- Use the same pan with left over oil, add minced garlic and chopped spring onions and saute for 2 mins.
- Then add in the chopped vegetables Onion, Bell pepper, carrot, sprouted green lentils, sweet corn, cabbage and stir fry on high flame for 1 min.
- Now add tomato chili sauce, soy sauce, vinegar and give a quick stir.
- Add 1 cup cooked Quinoa, pepper powder, salt as required and saute for 2 mins at high heat.
- Finally add in the fried tofu pieces and give a good stir.
- Add spring onion greens and turn off the stove.
- Protein rich quinoa fried rice is ready.
