Quinoa Fried Rice – Vegan

Protein rich Vegan Fried rice – Complete plant based protein and fiber-rich meal with Quinoa, vegetables, Tofu and sprouted bean. Make this hearty dish a great way to add variety to your diet!

Ingredients 

  • 1 cup Quinoa
  • 10 to 15 Firm Tofu pieces
  • 2 tbsp Oil
  • 1 tbsp Garlic, finely chopped
  • 1/2 cup Onion, chopped
  • 1/2 cup Mixed Bell pepper, chopped
  • 1/4 cup Carrot, chopped
  • 1/4 cup Sprouted Green Lentils
  • 1/4 cup Sweet Corn
  • 1/2 cup Cabbage, Shredded 
  • 1 sprig Spring Onion, Chopped
  • Salt (as required)
  • 1 tbsp Tomato chili sauce
  • 2 tsp Vinegar
  • 2 tbsp Soy sauce
  • 1/4 tsp Pepper powder
  • Water

    Garnishing:
  • Spring Onion Greens 

Instruction:

Quinoa Preparation:

  1. Rinse 1cup quinoa under water, until the water comes out transparent. 
  2. Put rinsed quinoa in a medium pan, for 1cup Quinoa add 2 cups of water (1:2 ratio),1 tsp salt and bring to a boil over medium heat. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Let it cool. Transfer to a bowl.

Tofu Preparation:

  1. Place the super firm tofu on the paper towel and Squizzy out the excess water from the tofu by applying mild pressure.
  2. Once its dried completely, cut in to small pieces

Quinoa Fried rice:

  1. Heat oil in a pan and shallow fry the tofu pieces (until golden and crispy)
  2. Take out and keep aside for later use.
  3. Use the same pan with left over oil, add minced garlic and chopped spring onions and saute for 2 mins.
  4. Then add in the chopped vegetables Onion, Bell pepper, carrot, sprouted green lentils, sweet corn, cabbage and stir fry on high flame for 1 min.
  5. Now add tomato chili sauce, soy sauce, vinegar and give a quick stir.
  6. Add 1 cup cooked Quinoa, pepper powder, salt as required and saute for 2 mins at high heat.
  7. Finally add in the fried tofu pieces and give a good stir.
  8. Add spring onion greens and turn off the stove.
  9. Protein rich quinoa fried rice is ready.
