Black Urad dal / Black Lentil
Black gram, also known as urad dal, is one of the most commonly found lentils in every Indian kitchen. It is used in various culinary recipes like dosa, vada and papad but most commonly it is used to make dal. Black grams possess many health benefits ranging from improving digestion to regulating blood sugar levels and also they are also used in Ayurvedic medicine too. Black gram is also known by names like black lentils and matpe beans. This lentil is so popular that it forms an indispensable part of exotic cuisines and if consumed daily, it has a positive impact on your health.
Sesame Seeds
Consumption of Sesame Seeds increases during winters or when it is cold as it helps in generating heat in the body. Sesame Seeds or Ellu are also a good plant based source for Calcium.
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 :
- Sesame urad dal podi – In a pan, add black urad dal, pepper corns, dry red chili, curry leaves and dry roast for 2 mins at low to medium heat.
- Then add black sesame seeds at last and roast for 1 min (or until its starts to splutters)
- Cool down completely and grind to a fine powder.
- This powder can be stored in air tight container for 1 to 2 months and use when required.
STEP 2 :
- In a pan add 2 tbsp sesame oil, once heated add mustard seeds, peanuts, chana dal, urad dal and roast for 2 mins.
- Then add red chili, curry leaves, pinch of asafoetida and roast for few seconds.
STEP 3 :
- Now add left over rice, salt and give a good mix for 2 mins.
- Finally add in the prepared sesame urad dal masala powder and saute for few seconds.
STEP 4 : Serving
- Serve this delicious Sesame seed rice with Potato Chips and any kinds of Vathal, Vadam & Fritters.
TIPS AND TRICKS:
- If using freshly prepared rice, allow the rice to cool down completely (this will help to retain the texture of the rice without breaking)
- Sesame Urad dal podi can be stored in air tight container for 1 to 2 months and use when required.
- In this recipe – I have used black sesame seeds and black urad dal, you can replace with white sesame and white urad dal (white lentil)
- In place of raw peanuts, you can replace it with roasted peanuts. Make sure to add them at the last.

- Finally add in the prepared sesame urad dal masala powder and saute for few seconds.
- Serve this delicious Sesame seed rice with Potato Chips and any kinds of Vathal, Vadam & Fritters.
