This One pan Shrimp fajitas are an easy and flavorful weeknight meal. A classic Mexican recipe, shrimp is cooked in homemade fajita seasoning, then tossed in with sauteed bell peppers and onions.
A squeeze of fresh lime adds a punch of flavor and the shrimp fajitas are served with warm tortillas and toppings or add to your burrito bowl.
MAIN INGREDIENTS
Shrimp – 1 lb medium size Frozen Shrimp (thawed), If using fresh Shrimp – peeled, deveined and tails removed
Onions – 1 large Onion, thinly sliced
Bell peppers – 2 large Bell peppers, thinly sliced (mix of red, yellow, green)
Fajita Seasoning – 2 1/2 tbsp Fajita seasoning, divided (adjust according to your spice level). For homemade fajita seasoning check instruction below
Oil – 2 tbsp of Olive oil
HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS
STEP 1 : Cooking Shrimp
Heat 1 tbsp of the olive in a large skillet. Add the shrimp to the skillet then sprinkle about half of the fajita seasoning over the shrimp and toss.
STEP 2 :
Cook the shrimp for 4 to 5 minutes, 2 to 3 minutes per side, until it’s pink and opaque. Transfer the shrimp to a plate or bowl and set aside.
STEP 3 : Sauteed Onions & Bell peppers
- Add the other tbsp of olive oil to the same skillet.
- Add the onion and cook for a couple minutes until it’s slightly translucent.
STEP 4 :
- Next, add the bell peppers and the remaining fajita seasoning and toss.
- Cook for another 3 to 5 more minutes so the peppers cook slightly, you don’t want them over cooked, they should be a bit crunchy.
STEP 5 : Final Preparation
Add the shrimp back to the skillet and toss with the peppers.
STEP 6 : Serving
Serve hot with steamed rice or add to your burrito bowl.
HOMEMADE FAJITA SEASONING
Ingredients:
- 1 tsp Chili powder
- 1 tsp Cumin powder
- 1 1/2 tsp Garlic powder
- 1 tsp Paprika powder
- 1 tsp Dried Oregano
- 3/4 tsp Salt
- 1/4 tsp Black pepper powder
Add all the above ingredients to a bowl and mix well. Your Fajita seasoning is ready, make ahead and store in containers.
TIPS AND TRICKS:
Keep an eye on your shrimp, you don’t want to overcook them and make them rubbery.
Don’t overcook your peppers and onions! You want them to still have a little crunch. If you overcook them, they will become mushy.
Storing – Transfer leftover shrimp fajitas to an airtight container. They’ll last in the fridge for 3-4 days. You can reheat in the microwave, or in a skillet over medium heat.
Variations – Serve prepared fajita over tortillas, garnished with cilantro and top with salsa, sour cream and any of your favorite toppings.
