Spicy Roasted Cashew nuts

Perfectly roasted cashews infused with spices like turmeric, cumin, coriander, and paprika! A crunchy, healthy, and delicious savory snack or appetizer!

MAIN INGREDIENTS

Cashew nuts – 1 cup of Raw whole cashew nuts

Spices – 1/4 tsp of Turmeric and paprika, 1/2 tsp of cumin, coriander and onion powder

Sweetener – 1 tbsp of Brown sugar or refined sugar

Other ingredients – Salt and Oil

HERE ARE MY STEP-BY-STEP INSTRUCTIONS WITH PHOTOS

STEP 1 : Preparation

Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

STEP 2 :

  • To a small saucepan, add the water, brown sugar, and salt. Heat over medium heat for about 2 minutes, or until the sugar has melted.
  • Switch off the heat.

STEP 3 :

  • Add cashew nuts to the pan.
  • Then add all the spices (turmeric, paprika, cumin, coriander, onion), 1/2 tsp of oil and stir to coat the cashews.

STEP 4 : Final Preparation

  • Spread the cashews on the prepared baking sheet in a single layer and roast for 12-13 minutes.
  • Stir once halfway through baking. You don’t want to roast the cashews too much. 

STEP 5 : Serving

Remove from the oven and let it cool completely. Enjoy as a savory snack, or as an appetizer.

TIPS AND TRICKS:

Nuts – Buy good quality raw cashew nuts.

Baking – Do not crowd the baking tray so there is space for the heat to roast the cashew nuts.

Storage – Store the spiced cashews in an airtight container for up to 2 weeks.

Substitute – I used brown sugar, replace it with coconut sugar or raw honey.

Variations – Serve it as a snacks or you can add them to salad bowl and trail mix for additional flavors.
